Borage (Borago officinalis, Star Flower)

The name is thought to come from the Latin borra meaning to bring courage and the blue flower was often embroidered onto the clothing on knights going off to battle to protect them and strengthen their resolve, worn also in buttonholes to the same effect. An old Latin verse ‘Ego borago gaudia semper ago. I, Borage, always bring courage’ was said to be recited by Roman soldiers preparing for contests of strength.

Medicinally it was used for bronchitis, fever, kidney complaints and nervous disorders as well as being used externally for inflammation, bruises and sore eyes.  Borage herb is a fine source of calcium and potassium and is recommended for toning up the glandular system, lung and chest disorders.

Known also as Cool-tankard, the flowers of borage  were used in drinks for their cooling effect before ice was a widely available and used commodity. The young leaves, which taste of cucumber, used to be boiled like spinach and eaten as a pot herb, it was also added raw to salads along with the flowers.
